I feel incredibly blessed to live in an area with great restaurants and only 45 minutes away from New York City, home to some of the greatest restaurants in the world. Sometimes I think sandwiches are just about the most fabulous thing a person can eat. I definitely eat way too many of them and could probably cut back, but sometimes they really do make the perfect meal. On Friday night it was rainy and kind of cold out for July, and sandwiches sounded like the perfect comfort food for dinner that night. Sandwiches with bacon, no less.
I had some bacon, some thinly sliced turkey (the only way I like it on a sandwich), tomatoes, and lettuce and some good sourdough bread. So, I thought I’d make turkey blt’s. Then, I remembered I had some fresh dill that I really needed to use up. I decided to try my hand at making a dill mayonnaise. Turns out, it was exactly what the sandwich needed to kick it up a notch and you won’t believe how easy it was. (more…)
Guacamole is a staple in my house, meaning, I make it and eat it on a regular basis. I know there are thousands of recipes out there for guacamole, but I really believe mine is the best. Maybe that’s arrogant, but it comes out perfect every time and my dad, who is not a guacamole fan, actually eats mine. So, it’s pretty darn good. It’s especially good this time of year, when the tomatoes are ripe and the avocados are in good condition. I made an especially good batch last night… (more…)
I love homemade pizza. Well, I love eating the homemade pizza. I HATE rolling out the dough because it never seems to cooperate with me, but once I have that part done, I enjoy the rest of the process – i.e. the toppings, and the eating. Normally I just go with plain pizza dough and then I top it with whatever I’m in the mood for. However, I was shopping at Trader Joe’s the other day and I saw they had flavored pre-made pizza dough and I figured I’d give it a whirl. I decided to try the garlic & herb pizza dough. (more…)
I am so proud of this salad. I really shouldn’t be because it’s so incredibly simple. But I get so excited when I create a dish on my own from scratch and the flavors actually meld together perfectly. (more…)
Sooo sorry I have been MIA for awhile. I was on vacation, which I will be posting about soon. Just know it was somewhere warm, and I spent the majority of my time on a beach with a pina colada or stuffing my face at one of the many resort restaurants (more details to come). (more…)
