It’s Day 9 of the Daniel fast and I’ve found my favorite recipe thus far! Veggie Paella. I would totally eat this even if I weren’t doing the fast. It is so good and unbelievably easy. Non-vegetarians could add chicken, sausage, shrimp (or basically any meat) to this dish and it would be delicious but it is very tasty as it is. It’s a very colorful dish too!
Everyone knows that spinach is a power food (remember Popeye?), but sometimes it can be hard to figure out new and exciting ways to incorporate spinach into meals. This past weekend, I discovered two new recipes FULL of spinach. (more…)
Wednesday evening was my day of food prep and cooking for the Daniel fast. I got A LOT done. I made chola tikkis (Indian flavored chickpeas & potato cakes), corn & bean salsa for burritos or salad toppers, and a huge pot of Weight Watcher’s vegetable soup. (more…)
I’ve decided that the main roadblock to most diets or fasts is lack of preparation. I’m already running into this problem. I have a pretty busy life, as I’m sure, most people do. Working a full time job, managing social obligations, everyday chores, AND cooking healthful meals sometimes seems impossible. It’s very easy to put on weight when you’re starving after a long day of work, because most people will grab whatever’s easiest to eat, whatever’s available, which usually happens to be a fairly fattening snack. It’s much easier to open a bag of potato chips or microwave a frozen treat than it is to cut up a bunch of veggies and fruit. (more…)
I managed to make it through my first day of the Daniel fast, which in some ways, I think is the hardest day. I could be wrong, but I’m feeling more motivated now that I have day 1 under my belt. (more…)
I first heard of the Daniel Fast from a woman at my church. She had just completed it and said it really made her feel amazing. I didn’t think much of it. In fact, I thought, wow good for her, but I could never do it. I am not the fasting (or dieting) type. I try to practice portion control, but that’s as far as it goes. But for some reason, I couldn’t stop thinking about the Daniel Fast and proceeded to google it at work the next day.
It looked tough. It’s basically a Vegan diet without carbs, sugar, or alcohol. So, really, all you can eat are fruits and vegetables and certain whole grains (like brown rice). The fast is supposed to last 21 days. So why, you may ask, would I ever even consider doing something like this? It’s so NOT me. I think about food A LOT. When I am eating, I’m usually planning my next meal. I love going out to eat, talking about food, reading about food, watching people cook, and all other things related to glorious food.
But then I thought, maybe there is something wrong with that? I probably shouldn’t be focusing on food THAT much and recently I’ve been eating REALLY badly. So, I’m giving it a go. Today is day 1. I’m hoping that not only will the fast make me more aware of what I am eating, but that it will be a good thing spiritually, emotionally and mentally as well. I’ll let you know how it goes!
Side note. I did some bulk shopping at Trader Joe’s last night and the girl at the checkout counter says, “Wow, you eat really healthy”. If only she knew…
Asparagus can be a tricky vegetable. Luckily, I’ve found that most veggies taste good roasted. It’s a fool proof way to cook them too. Asparagus falls under this category. It is delicious roasted in the oven. This recipe is so simple, it’s embarrassing. It’s not really even a recipe so much as it is a method of cooking. Whenever I roast vegetables, this is how I do it. I received two very interesting Christmas gifts from Pampered Chef this Christmas. One gift was recognizable and one was not. The recognizable gift was a mandolin (a very sharp kitchen utensil used for slicing). The unrecognizable gift looked like two black, plastic saucers. They were light weight and rubbery and had holes throughout. My mom, seeing the puzzled expression on my face, explained that the two gifts were meant to be used together as a potato-chip making contraption. She assured me that the chips would be calorie free and delicious. I smiled and said thanks, wondering how much I was really going to be making my own potato chips when I could easily go to the grocery store and buy a perfectly good already made bag. (more…)
I love fries. Recently though, I’ve started to order sweet potato fries instead of regular fries. At restaurants you usually get thin cut, deep fried sweet potato fries which are obviously delicious. But I’ve found an equally delicious and healthier way to make them at home. I apologize for the lack of measurements. I hate to measure. (more…)
