Smoky, grilled peppers

Gotta love grilling in the Summer. The two almost go hand in hand. Last night I broke out the cuisinart grill/griddle for some marinated grilled chicken. I was trying to figure out what I would cook as far as vegetables go and I remembered that I had a few orange bell peppers in the fridge that I needed to use up. Generally, I would probably just cut them up and eat them raw, dipped in a little blue cheese dressing (my fave!), but I was in an adventurous mood. I figured since I was already grilling the chicken, why not grill the peppers too? I brainstormed and shuffled through my spice cabinet to see what I could put on the peppers to give them a little more flavor, although, quite frankly, grilling them gives them great flavor on their own. I settled on cumin and chili powder. I thought it would give the peppers a great smoky taste, and I just love the way cumin smells in general. (more…)

Summer Pasta

Normally when I think of pasta, I think of a hearty, filling meal made for those winter months when you really need some comfort food. However, it’s spring now, and it’s been fairly warm the past few weeks so I just wasn’t in the mood for a heavy pasta dish but I also wanted something quick and easy, and really, what’s quicker and easier than a pasta dish? Zucchini Corn Skillet

I was running out of things to do with vegetables and getting bored with the way I usually cook them. I love roasting vegetables with olive oil, salt, and pepper (and sometimes crushed garlic), but sometimes you gotta switch things up. I’m always looking for ways to eat more veggies, so I googled for some inspiration. I came across this recipe for a corn and zucchini melody and decided I would shake things up and try to make my own variation on this dish. I always find that googling and searching the internet for recipes gives me ideas to come up with my own. I either never have all the ingredients on hand so I improvise, or I decide to add to the recipe, or sometimes, I find that searching for recipes simply gets my creative juices flowing and I come up with my own. In this case, I used the base of the recipe, but I definitely added my own twist to it. Here is my take on how to make a delicious corn and zucchini skillet. It’s the perfect side dish for summer. Grilled Buffalo Tofu

One night, a very good friend of mine invited me over for dinner. She started discussing the items she was going to grill; Asparagus, marinated chicken, and tofu with buffalo sauce. I admit, I was skeptical. It didnt sound like a very good combination. I like tofu, and I like buffalo sauce on boneless wings, but I had never thought to put buffalo sauce on tofu and grill it. I decided to keep an open mind. So, when I arrived for dinner, I loaded up on the chicken wings and the asparagus and took a couple of pieces of the grilled tofu. I ate a bit of the tofu and was completely surprised! It was delicious, and I daresay, my favorite thing I ate that night. (more…)

Done with The Daniel Fast

I am finally done with Daniel. I’ve completed the fast. I feel relieved, healthier, and lighter. I didn’t lose as much weight as I expected, but 7.5 lbs in 3 weeks is not bad. Honestly, the first 2 weeks were easier than the 3rd week. This last week was a challenge. I found myself craving bread and meat, tempted to reach for the tortilla chips, and getting lazier in my cooking. It’s hard to cook from scratch every night, and after 2 failed dinner attempts, I almost called it quits. I’ve decided that I should stick to eating Indian food, and avoid cooking it. I still can’t figure out what I did wrong, and I’m blaming it on the Garam Masala I bought at the store. (more…)

Veggie Paella

It’s Day 9 of the Daniel fast and I’ve found my favorite recipe thus far! Veggie Paella. I would totally eat this even if I weren’t doing the fast. It is so good and unbelievably easy. Non-vegetarians could add chicken, sausage, shrimp (or basically any meat) to this dish and it would be delicious but it is very tasty as it is. It’s a very colorful dish too!
