Grilled corn and asparagus salad

  1. Preheat your grill to medium heat.
  2. Remove all the husks and silk from the corn. Slather the corn with olive oil and sprinkle with salt and pepper.
  3. Trim the asparagus by cutting off the tough ends. Coat them in olive oil and sprinkle with salt and pepper.
  4. Place the corn on the grill and close it. Rotate the corn every 2-3 minutes until the corn kernels are lightly charred all over. Set to the side and cover with foil to keep warm.
  5. Place the asparagus carefully on the grill. Cook for two minutes and carefully use tongs to flip them over for another 1-2 minutes. You want them to have nice grill marks.
  6. Using a sharp knife, cut the kernels off of each corn cob and place in a bowl.
  7. Cut the grilled asparagus into 1 inch pieces and add them to the bowl with the corn.
  8. Add the feta cheese crumbles, the lemon juice and 2 tablespoons of olive to the corn and asparagus while they are still warm and toss to combine. Taste and add more salt and pepper if needed.
Recipe Notes

**Grill temperatures vary. If you are using a grill pan inside, the corn and asparagus will take longer to cook.
