I know avocado toasts are all the rage right now. They’re even on the verge of getting too popular, like kale was a year or so ago. Food, like everything else has its trends and when something gets too much publicity it suddenly becomes uncool. But I don’t care. I’m late to the avocado toast game and I’m sure I’ll get a few eye rolls for this one but avocado toasts are amazing and I <3 them. So, food snobs who are over avocado toasts, look away! Read no further!
These avocado toasts are pretty basic. I made them on Saturday morning when I wanted to eat something healthy but not too healthy and I didn’t want to make anything complicated. So, these are my semi-healthy, uncomplicated avocado toasts. (more…)
I’m obsessed with brunch lately. And although New York City, with it’s plethora of fantastic brunch restaurants, isn’t far away, sometimes I don’t want to make the trip. But finding local places that do brunch well isn’t that easy. Princeton definitely has some notable places but I’ve pretty much tried them all. I came across Pascale and Sabine via an internet search a few months ago and I’ve wanted to try it ever since. It got great reviews on Trip Advisor and the menu looked promising. And although I’d like to sample the dinner menu as well, the brunch menu is what really stood out to me. I added it to my list of restaurants I must try and finally got around to stopping in this past weekend. (more…)
Can I just say, being housebound is sometimes a fabulous thing. I probably wouldn’t appreciate it every weekend, but sometimes a snow day is exactly what the doctor ordered. All of our weekend plans were canceled due to super storm Jonas, the blizzard that pummeled the Northeast with about two feet of snow this weekend, and we were forced to stay home and…just be. It was a beautiful thing. I got to binge watch some new TV shows, read Drums of Autumn (so good!), and play in the snow with my two dogs, the hubs, and my two good friends. I can’t remember the last time I felt so relaxed and refreshed. I also got to cook up a storm in the kitchen, which is so much fun for me. The cleanup not so much, but the cooking part and the eating part usually make it worth it. Perhaps my favorite recipe I made this weekend, is this Huevos Rancheros oven bake. (more…)
Matt and I took a few days off last week. We “went down the shore” (as they say in Jersey) and spent a few days with family and then spent some time at home relaxing. I did some reading (finished Mindy Kaling’s book and started One for the Money, by Janet Evanovich), A LOT of laundry, and a fair amount of cooking. I love days that have no set agenda and you’re free to be as lazy or as productive as you’d like. Every now and then, days like that are 100% necessary, at least for me. On one such day I made these easy, cheesy scrambled eggs with pancetta and scallions. I slept in (read: woke up at 8am and lounged around watching Food Network and Bravo until 10am) and leisurely made my way to the kitchen. I was about to pour myself a bowl of cheerios when I decided that I wasn’t in the mood for an ordinary breakfast. This was a special day! A lazy day! And, occasionally, lazy days should be celebrated. So, I made scrambled eggs. But not just any scrambled eggs. Delicious, creamy scrambled eggs with salty pancetta and crunchy scallions. (more…)
Mmm…brunch. There is something about brunch that just makes me feel relaxed. I love it, especially around this time of year. The weather is warm, many places offer outdoor dining, the menus are incredible and it’s a great way to enjoy the spring season. Recently, I was lucky enough to get brunch in Princeton two weekends in a row and it got me thinking about all the awesome Princeton brunch spots there actually are. If I choose to eat out, it’s generally for dinner. I often forget or overlook the brunch spots altogether. But going out to eat for brunch is such a rewarding experience, especially if you get to do it in the Princeton area. (more…)
I know I may be in the minority when I say this but I love snow. I don’t particularly like the cold but if it’s going to be cold I want it to snow! Lucky for me, we have about 5 inches on the ground right now and the snow is still coming down. I got to work from home today which basically means monitoring my emails and making a few calls. Working from home also means lots of free time for things I love like cooking.
One of the things I made on my “snow day” was this pesto frittata. First of all, let me just say that frittata’s are awesome. They are basically a delicious way to use up any leftover veggies, meat or cheese you have in your fridge. They are incredibly easy to make and the finished product always looks beautiful. Frittatas are a great brunch item because they don’t have to be served piping hot. They are delicious at room temperature too. You also don’t have to stand at the stove flipping omelets or pancakes. The frittata starts on the stove but finishes cooking in the oven. (more…)
I’m not much of a breakfast person normally. I love breakfast when I am on vacation, but on a day to day basis it’s the one meal I don’t set aside time for. Breakfast is a grab and go kind of meal for me. Lately my breakfasts consist of 2 clementines and a baby bel cheese ball. But on Saturday, my friend was dog sitting for a family in Princeton and mentioned that the house had a huge fenced in backyard. She had the brilliant idea of hosting a doggie play date/ brunch. We brainstormed and decided we would have mimosas, bagels with cream cheese and lox, french toast with fresh fruit, and a dish involving bacon and eggs. We split up what we would each bring and I volunteered to bring the dish with the bacon and eggs. This casserole is what I came up with and I was really pleased with how it turned out. We had the perfect weather, an amazing spread of food, and the dogs had a great time too. It was exactly what I needed after a long work week. There’s something about brunch that just makes everyone feel relaxed. (more…)
