Grilled corn, asparagus and feta salad

Summer is here! My favorite season. Flip flops, the ocean, tan lines, fireflies and this grilled corn and asparagus salad are just some of the reasons why I love summer. Recently I’ve become obsessed with grilling, which is a good thing because it’s grill weather. I think, for a while, I was slightly intimidated by the grill. I always let my dad or brother do the grilling when I lived at home and when I moved out I lived in an apartment, where having an outdoor grill wasn’t allowed. Now that I have a house and my own grill, I fire it up pretty much all summer long. It’s a great and simple way to get awesome flavor into food.

For Father’s Day, I grilled some sirloin steaks with salt, pepper (and…sshhh…a little bit of butter) and everyone raved about them. They all kept asking me what I marinated the steak in. That’s the magic of the grill, and salt of course. The steaks were a hit but they shared the spotlight with this grilled corn and asparagus salad. It’s the perfect side dish for any summer dinner, picnic or barbecue. It’s also made up of only five ingredients, plus salt and pepper, which I declare freebies. (more…)

Sometimes it amazes me how simple recipes turn out to be the best ones. Most people often think that complicated cooking techniques, a slew of exotic ingredients, and a lot of time make a good recipe, and sometimes they do. But many times it’s just the opposite. Dishes that utilize only a few, good quality, local ingredients can turn out just as well as the fancy, complicated ones. Sometimes, they turn out even better. And that’s what happened when I made this simple eggplant, corn and feta salad. When I took my first bite, I was honestly surprised at how good it turned out because it’s too easy! (more…)

I feel like I’ve been cooking a lot with eggplant lately. Hopefully you’re not sick of it yet! It’s just so good this time of year and I can’t seem to get enough of it. I love it. It’s probably one of my favorite vegetables. Hence, the plethora of eggplant recipes. I also can’t get enough of the local sweet corn around here. It makes me sad to think summer is almost over and that a lot of the fresh vegetables and fruit I love so much will be out of season in a month or so. But, summer’s not over yet! So let’s enjoy it while we can and take advantage of all the delicious food this season brings. This grilled eggplant and corn salad is one way to do that.  The hot, grilled eggplant absorbs the tangy vinaigrette and the combination of that with the sweet corn is SO good. I wish I made two batches of the stuff because between my husband and I, it vanished in a couple of hours. (more…)

It’s been way too long since I last blogged! I’ve been in Maui (be jealous) lounging on a beach and eating some fantastic food. My goodness, Maui is beautiful! I felt like I stepped into a post card. Zucchini Corn Skillet

I was running out of things to do with vegetables and getting bored with the way I usually cook them. I love roasting vegetables with olive oil, salt, and pepper (and sometimes crushed garlic), but sometimes you gotta switch things up. I’m always looking for ways to eat more veggies, so I googled for some inspiration. I came across this recipe for a corn and zucchini melody and decided I would shake things up and try to make my own variation on this dish. I always find that googling and searching the internet for recipes gives me ideas to come up with my own. I either never have all the ingredients on hand so I improvise, or I decide to add to the recipe, or sometimes, I find that searching for recipes simply gets my creative juices flowing and I come up with my own. In this case, I used the base of the recipe, but I definitely added my own twist to it. Here is my take on how to make a delicious corn and zucchini skillet. It’s the perfect side dish for summer.
