I know avocado toasts are all the rage right now. They’re even on the verge of getting too popular, like kale was a year or so ago. Food, like everything else has its trends and when something gets too much publicity it suddenly becomes uncool. But I don’t care. I’m late to the avocado toast game and I’m sure I’ll get a few eye rolls for this one but avocado toasts are amazing and I <3 them. So, food snobs who are over avocado toasts, look away! Read no further!
These avocado toasts are pretty basic. I made them on Saturday morning when I wanted to eat something healthy but not too healthy and I didn’t want to make anything complicated. So, these are my semi-healthy, uncomplicated avocado toasts. (more…)
Matt and I took a few days off last week. We “went down the shore” (as they say in Jersey) and spent a few days with family and then spent some time at home relaxing. I did some reading (finished Mindy Kaling’s book and started One for the Money, by Janet Evanovich), A LOT of laundry, and a fair amount of cooking. I love days that have no set agenda and you’re free to be as lazy or as productive as you’d like. Every now and then, days like that are 100% necessary, at least for me. On one such day I made these easy, cheesy scrambled eggs with pancetta and scallions. I slept in (read: woke up at 8am and lounged around watching Food Network and Bravo until 10am) and leisurely made my way to the kitchen. I was about to pour myself a bowl of cheerios when I decided that I wasn’t in the mood for an ordinary breakfast. This was a special day! A lazy day! And, occasionally, lazy days should be celebrated. So, I made scrambled eggs. But not just any scrambled eggs. Delicious, creamy scrambled eggs with salty pancetta and crunchy scallions. (more…)
I’m not much of a breakfast person normally. I love breakfast when I am on vacation, but on a day to day basis it’s the one meal I don’t set aside time for. Breakfast is a grab and go kind of meal for me. Lately my breakfasts consist of 2 clementines and a baby bel cheese ball. But on Saturday, my friend was dog sitting for a family in Princeton and mentioned that the house had a huge fenced in backyard. She had the brilliant idea of hosting a doggie play date/ brunch. We brainstormed and decided we would have mimosas, bagels with cream cheese and lox, french toast with fresh fruit, and a dish involving bacon and eggs. We split up what we would each bring and I volunteered to bring the dish with the bacon and eggs. This casserole is what I came up with and I was really pleased with how it turned out. We had the perfect weather, an amazing spread of food, and the dogs had a great time too. It was exactly what I needed after a long work week.
