When I was in college, one of my roommates used to make the most amazing rice and beans dish (she also made some mean quesadillas that I still make today and people just go nuts over them). Although I’ve always liked rice and beans as a side, I’d never had them the way she prepared them and they quickly became a favorite. I asked her to make them for me on a weekly basis and being the good friend she was, she would gladly make us up a batch. White rice, black beans, butter, a little onion and lots of spicy red pepper or jalapeno and the dish was done. I have no idea why that combination works so well, but it does! (more…)

This recipe is so so easy AND it involves the slow cooker/crock pot. Win, win. It all started with Andouille sausage. This was my first time cooking with Andouille sausage so I wasn’t sure how it would turn out. I usually cook with hot or sweet Italian sausage. I decided instead of just making my usual go to recipe of sausage and peppers, I’d give it more of a Creole style flair (I think of Creole flavored food when I think of Andouille) with some beans, corn, cilantro and hot sauce. This dish can be eaten plain as sort of a sausage gumbo, or served with rice, pasta or crusty bread. (more…)
It’s been awhile since I’ve posted but I’m sure you all have been busy with Thanksgiving and the Holiday season coming up! However, that’s not the only reason for my lack of posts. I’ve been in the Cayman Islands recently! I stumbled upon a groupon for the Sunshine Suites on Grand Cayman in the Seven Mile Beach area and decided I could really use a vacation. I spent a week soaking up some sun and enjoying some much needed relaxation. Seven Mile Beach is world renowned for it’s beauty. The beach is made up of fine white sand, and water so crystal clear you can see straight to the bottom. I was expecting to enjoy the beauty of the island, but what I wasn’t expecting was the wide variety of amazing food that awaited me. Grand Cayman is truly and island fit for foodies. Generally I don’t think of a salad as needing a recipe. I know there are some good salads out there, but when I make one I usually just put some lettuce in a bowl, add a few toppings and some bottled dressing to make it taste good and call it a day. I don’t really take the time to prepare a salad. Salads are usually the precursor to the main meal; Something to just fill you up so you don’t overeat later. It’s very rare that I find a salad that I actually like almost more than the main course and that I actually look forward to eating, but this salad is pretty good. If I found it worth writing about, it’s actually a pretty darn good salad.

Before you say ew, hear me out. I know brussels sprouts are not the most popular veggie out there, but that’s because a lot of people aren’t sure how to cook them. Truth be told, brussels sprouts are a favorite vegetable of mine, because if they are cooked right, they can have great flavor and they are very good for you. They are actually pretty simple to prepare.
If your ideal vacation consists of staying in a five star resort, relaxing on a white sand beach sipping a fruity cocktail with the crystal clear turqoise water of the Caribbean lapping at your feet, then Punta Cana is your destination. Although there are many beautiful islands throughout the Caribbean, Punta Cana is THE place for all inclusive five star resorts. Not only are they a dime a dozen, but the prices are usually the best in the Caribbean. This was my second visit to Punta Cana, and you can be sure I will be back. (more…)
Oh my gosh! These crab cakes were out of this world. Unfortunately, I can’t take credit for the recipe. This recipe is courtesy of Paula Deen aka the queen of butter, but lucky for us ,this recipe is actually not too horrible. They come out to be about 5 points per crab cake on the Weight Watcher’s system (based on a 6 serving batch. You can definitely make the crab cakes smaller for less points). (more…)
It’s probably not technically Japanese, but this is a recipe my mom always used to make us as kids and for some reason, we called it Japanese beef. The meat does sort of taste like the beef you get when you go to a hibachi steakhouse, so I guess that’s how we came up with the name. Flavored with simple ingredients like garlic, ginger, and wine this dish is simple to make and yet full of flavor. The other great thing about this dish is that it only calls for a few ingredients and most likely, you won’t have to go shopping for anything because you will probably already have these things on hand. Naturally, I’m not a typical meat and potatoes kind of gal. Not that I have anything against traditional meat and potatoes, because trust me, there are some really delicious ways to make meat and potatoes. I just am generally more of an adventurous eater. I like to explore the culinary world.
Even so, the other night meat and potatoes sounded pretty darn good. These recipes are a twist on the classic. Thinly sliced panko crusted pork chops and gravy, Ina Garten’s potato basil puree, and kale sauteed with bacon and white wine. It’s definitely more of a comfort food meal, and not a figure friendly one. Although, kale is full of nutrients. Let that ease your conscience as you eat the pork chops and potatoes. (more…)
